Very Ritzy Chicken

1 1/2 Pounds Boneless Chicken

-Sliced

-Breasts

2 Cups Whipping Cream

2 Eggs, Beaten

1 Cup Parmesan Cheese

2 Cups Italian Bread Crumbs

2 Tablespoons Parsley, Chopped

3 Tablespoons Oil

8 Ounces Mushrooms, Sliced

6 Ounces Monterey Jack Cheese,

 

Preheat oven to 350 degrees.
Cook the mushrooms in butter. Season with salt and pepper.
Dip chicken into beaten eggs and coat with bread crumbs.
Heat the oil in a fry pan, add the chicken and cook chicken until brown.
Place the browned chicken in a baking dish.
Top with cheese and mushrooms.
In a saucepan, combine the whipping cream, Parmesan cheese, and parsley.
Cook over medium high heat, stirring frequently, until thickened.
Pour over chicken and bake until cheese melts and sauce bubbles in center.
About 30 minutes.

Serve with chicken flavored rice.
