Thanksgiving Giblet Gravy

Yield: 2 Cups

Turkey Giblets And Neck

4 Peppercorns

Red Cooking Wine

2 Tablespoon Flour

Onion

2 Cups Turkey Drippings

Celery Tops

 

Place the giblets and turkey neck in a pot with the celery, peppercorns, and onion.
Cover with wine.
Simmer until cooked, approximately 90 minutes.
Check the liver after about 20 minutes, as it will finish cooking before the rest of the giblets do.
When cooked, remove from pot. Throw out contents of pot.
Allow to cool.
Shred the meat from the neck.
Dice the giblets, throwing out the bits of tough cartilege.

Collect drippings from turkey and place in a pot.
Whisk together the flour and about 1/4 cup turkey drippings.
Add flour mixture to drippings.
Add giblets and simmer until thickened, stirring occasionally.
Season with salt and pepper to taste.
