Shrimp Alfredo

Yield: 4 Servings

1/2 Cup Butter

4 Eggs, Yolks Only

1 Pound Medium Shrimp, Peeled And

1 Cup Half & Half

-Deveined

1 Cup Parmesan Cheese

1 Tablespoon Green Onion, Minced

2 Teaspoon Fresh Parsley, Minced

1/2 Teaspoon Garlic, Minced

1/2 Teaspoon Salt

9 Ounces Fettuccine, Cooked Al

1/4 Teaspoon Black Pepper

-Dente

 

In a large skillet over a medium heat, melt butter.
Saute' shrimp, green onion, and garlic for 3 to 4 minutes or until shrimp are firm and opaque.
Remove from heat. Stir warm fettuccine into shrimp.
In a medium bowl beat egg yolks, half & half, and parmesan cheese.
Add to shrimp/pasta and cook over medium heat until sauce thickens, about another 3 or 4 minutes.
Do not boil. Stir in parsley, salt, and pepper. Serve immediately.
