Mom's Tacos

This was a favorite recipe of roberts. Really everybody likes them. Unfortunately, mom spent most of the meal in the kitchen cranking out platters of tacos. -peggy

8 Ounces Chorizo Sausage

1 Cup Celery, Chopped

16 Ounces Hamburger

1/2 Cup Green Onion, Chopped

1 Packet Taco Seasoning

8 Ounces Cotija Queso Seco,

1/3 Head Iceberg Lettuce, Chopped

-Crumbled

4 Medium Tomato, Chopped

12 Corn Tortillas

1 Can Canned Baby Peas, 15 Ounces

12 Tablespoons Corn Oil

Brown the hamburger and chorizo. Add the taco seasoning.
Simmer the meat until most of the juices have evaporated.
Take the meat off the heat.

Toss the lettuce, celery, green onion, and peas in a large bowl.
Place the chopped tomato in a bowl. Crumble the Cotija cheese into a bowl.

In a small saucepan, heat 2 tablespoons of oil until very hot.
Using tongs, place a tortilla in the hot oil.
Quickly fold the tortilla in half and cook each side until lightly crispy.
Place the cooked, folded tortilla on paper towels.
Cook each of the 12 tortillas in this manner, adding 2 tablespoons of oil to the pan every other tortilla.

While one person is cooking the tortillas, another person should be working to fill them.
Each tortilla should be filled with a layer of hamburger, salad, tomatoes, and cheese. Enjoy.

Cotija Queso Seco is a dry Mexican cheese made from cows milk. It is white, salty, and very crumbly.
You should be able to find some in just about any Mexican Mercado.
