Fresh Strawberry Pie

This is absolutely the best summer dessert ever! -peggy

2-3 Cups Strawberries (Fresh),

2 Drops Red Food Coloring, Optional

-Wash & Remove Stems

1 Pie Crust, Graham Cracker Or

3 Cups Strawberry, Pureed

-Regular

1/2 Cup Sugar

1 Tub Cool Whip

1/4 Cup Cornstarch

 

If using a regular pie crust, you will need to pre-cook it and let it cool to room temperature first.
Pat the washed strawberries dry and arrange in the prepared pie crust pointy side up. Set aside.

Sift sugar and cornstarch together. Place strawberry puree in a small pot.
Mix the cornstarch/sugar into the strawberry puree.
Cook over medium heat, stirring gently for 10 minutes or until the mixture has thickened.

Remove pot from heat.
If you prefer a darker red color for your strawberry sauce, mix in a few drops of red food coloring.
If your strawberry sauce has lumps, they can be removed by putting the strawberry sauce through a strainer.
Pour the strawberry sauce over the strawberries in the pie shell.
Refrigerate the pie until time to serve.
Serve with Cool Whip as garnish.
