Feta Cheese Pear Pecan Salad

Yield: 4 Servings

If you don't have access to fresh pears, you can substitute with canned pears. Just make sure they have been well drained. - peggy.

2 Heads Butter Lettuce

1/4 Teaspoon Red Pepper

4 Small Pears, Cored And Cut Into

1 2/3 Cup Pecan Halves

-Bite Size Pieces

1/2 Cup Olive Oil

8 Ounce Feta Cheese, Crumbled

2 Tablespoon Balsamic Vinegar

3 Tablespoon Butter, Melted

1 Tablespoon Dijon Mustard

1 Teaspoon Salt

1/4 Teaspoon Salt

1 Teaspoon Cinnamon

1/8 Teaspoon Black Pepper

Combine the butter, salt, cinnamon, and red pepper for the spiced pecans.
Pour over pecan halves and mix until pecans are well dressed.
Spread pecans onto a cookie sheet and bake in a 300 degree oven for 15 minutes.
Stir once during baking. Take out from oven and let cool completely.

Wash lettuce, pat dry, and tear into bite size pieces.
Place lettuce, pears, and feta cheese into a large salad bowl.

Whisk the dressing ingredients together. Pour over salad and toss.
Add pecans and toss again. Serve.
