Amaretto Cheesecake

Ernie is especially fond of cheesecake. It is one of the few desserts he is unwilling to share :-)! - peggy.

2 Cups Graham Cracker Crumbs

4 Eggs

1/4 Cup Chopped Almonds

1 Cup Sour Cream

1/2 Cup Butter, Melted

1/2 Cup Whipping Cream

16 Ounces Cream Cheese, Softened

1/4 Cup Amaretto

1 1/2 Cup Sugar

1/2 Teaspoon Almond Extract

Preheat oven to 350 degrees.

In a medium bowl, combine the graham cracker crumbs, chopped almonds, and butter.
Press into the bottom and up 1 1/2 inches up sides of a 10 inch springform pan.

In a large bowl, combine cream cheese and sugar.
Beat until light and fluffy.
Add eggs one at a time, beating well after each addition.
Add sour cream, whipping cream, Amaretto, and almond extract. Blend well.
Pour into prepared crust.

Bake for 60 to 75 minutes or until center is set.
To minimize cracking, place a shallow pan half full of hot water on lower oven rack during baking.

Remove cheesecake from oven and let sit 5 minutes.
Carefully remove sides of springform pan. Cool.
Refrigerate several hours or overnight before serving.
